  • Nearly Guilt-Free Flapjack!

    Ok, so It's Friday, week five of the Diet and I'm seriously gnashing for something sweet/biscuity/cakey.
    In desperation, I've adjourned to the kitchen and done a little experimenting.

    Weights and measures are approximate.

    Mix 250gms large porridge oats in a bowl with your choice of chopped nuts, seeds, dried fruit, dessicated coconut etc. - a couple of tablespoons of each.
    Coarsely grate in one medium eating apple and one small ripe pear - skin on both.
    Two tablespoon runny honey.
    One dessert spoon soft dark brown sugar.
    One table spoon low fat spread (I used Lurpak lightest)
    Pinch salt

    Mix all well together. The mix should be quite damp. If it seems a little dry, leave it in the bowl for a while as the aplle and pear will continue to give up their juices and moisten the mix sufficiently.
    Turn into a shallow 20cm baking tray - lined with silicone paper.
    Press out evenly.
    Bake gas 4 for 40-60 mins depending on if you want a soft flap jack or something more crisp.
    Whilst still warm brush with a little more honey and mark into portions.
    It will firm up as it cools.
    Any port in a storm!.....

            Oooh there is an old ww recipe for savoury flapjack in one of their cookery books T_S - will have to look next time I venture into the loft!

                I've been fiddling about with my oatie bar recipe to make a healthier version ........substituting prune puree for some of the fat content and therefore reducing the sugar by half . Using an omega seed mix (on offer in Julian Graves) instead of just sunflowers seeds......So far my Dad has given it the thumbs up .

                    You are in luck, T_S! It was in the second pile I looked through

                    It is in their Budget Cookery 1994!
                    Savoury Flapjack slices

                    2 tablesp margarine
                    1 small onion finely chopped
                    2 sticks celery finely chopped
                    1 small carrot, grated
                    6 oz rolled oats
                    1/4 teasp salt
                    4 teasp chopped mixed fresh herbs or 2 teasp dried
                    3 oz double Gloucester cheese grated (I always used strong cheddar)
                    2 eggs beaten

                    Oven - 190 / 375

                    Melt the margarine in a pan and saute the onion and celery for 4-5 minutes till softened. Stir in the carrot and cook gently for 2-3 more minutes. Cool slightly.

                    In a large mixing bowl combine the oats, salt, herbs and cheese. Add the vegetable mixture and eggs, stirring well till thoroughly combined.

                    Spoon the mixture into an 8" round cake tin and spread out evenly. Bake for approx 25-30 minutes till set and golden brown,

                    Cool in the tin for 10 minutes and then cut into 8 slices. Transfer onto a wire rack and cool completely.

                    185 calories per slice for those counting!

                    I reckon you could make it once to see how it works then start to add spices to your taste!

                            I have a well used copy of Perfect Cooking - Marguerite Patten , bought for me when I did 'O' level domestic science

                              I have that one too. The rationing cookbook recipes are ideal for those who want to give up sugar, or fat, or meat, or cheese, in fact most of the items that get bad press these days. The population was at its healthiest ever on this diet too!
