  • French bean chutney

    Has anyone any info on making french bean chutney. Have a glut on these, but they have got a bit "chunky" and only fit for chutney making really.

    Delia has a recipe on her site for a spicy runner bean chutney. That should work with french beans. www.deliaonline.com

            This is an old South African recipe for curried beans, a bit like picallili. I've never made them but the recipe comes from my Mum's recipe book and she had a reputation for making very good things.

            Boil 4 lbs green beans (she used to use French but I'm sure you could use any) with 2 lbs of sliced onions in 4 cups of water (thats 1l or just under 2 pints) until the beans are just cooked. You then add 3 1/2 cups brown vinegar (875ml SA recipes often use cups ), 2 cups sugar (500g), 2 dessertspoons of salt (about 20g) 2 dessertspoons curry powder (again about 2og) 2 tablespoons cornflour and a few cloves.
            Boil the whole lot for five more minutes and bottle.

            I'm not sure how much this makes but I should think lots so you may want to scale it down.

              I can vouch for the Delia recipe for spiced runner bean pickle, its bang on and much tastier than it sounds.
