  • Cut Rounds - bread/scones

    Those of you watching the Edwardian Farm will have seen them selling cream teas to the tourists who came in on the boat. Here is a recipe for the cut rounds - made instead of scones. - taken off the website for the series - actually in the chat at the end!

    Ingredients
    170g/6oz self-raising flour
    170g/6oz plain flour
    ½ tsp salt
    ½ tsp bicarbonate of soda
    290ml/½ pint buttermilk

    Preparation
    1. Preheat the oven to 400F/200C/Gas 6.
    2. Tip the flours, salt and bicarbonate of soda into a large mixing bowl and stir.
    3. Make a well in the centre and pour in the buttermilk, mixing quickly with a large fork to form a soft dough. (Depending upon the absorbency of the flour, you may need to add a little milk if the dough seems too stiff but it should not be too wet or sticky.)
    4. Turn onto a lightly floured surface and knead briefly.
    5. Form into a long round sausage and then cut from length the thickness rounds you require and place on floured baking sheet.
    6. Bake for about 30 minutes then cool on a wire rack.
    N.B.
    As mentioned on the programme it is the interaction between the Bicarb and the Buttermilk that will cause the mixture to rise.
    Add dried fruit if using for cream teas.

      Well spotted Thea - it looks like it, doesn't it. I had too much buttermilk for just the soda bread recipe so I started searching for the cut rounds to use the rest up. Needless to say I don't have enough for both!
      Whooops - now what are the dogs getting up to?

            Has anyone tried them yet? Are they better / worse than a scone? Mr P wants me to make scones for him to take to work but I was wondering about these.

              I'm interested in how many that the recipe makes.......sounds good for our centenary open day in the summer....and I wonder if they freeze. I can feel some experimentation coming on

                Made these today.....discovered that they work well with savoury as well as sweet. Quite a hard crust but nice and soft inside. Got 10 from the recipe but need to work at getting more uniform sizes ....I am going to freeze one before they all get eaten and see how they freeze.
