Default Celeriac Soup

Here you are Hazel.
As it seems to be the time of year to be given celeriac Here's the soup I make from it.

One large or two small celeriac
Ditto onion
Tablespoon oil
Clove or two of garlic - depends how (or even IF) you like it
Pint and a half of stock - you choose
Couple of fresh bay leaves - dry would do

Saute the onion and garlic in the oil until getting soft then add the cubed celeriac. Stir about for a bit then add the bay leaves and stock. Turn down heat, add lid, cook for 25-30 mins. Blend. Serves 2-3 for a good lunch with bread, more for a starter.
