  • Braised Red cabbage

    Hi all
    I want to do some braised red cabbage with christmas dinner, but have conflicting recipes - one with cooking apples, one with eating apples, one with no apples but cranberries..with nuts, without nuts...

    Whats the best one?

    i use apples and raisins....balsamic and white wine vinegar, and some sugar...

        I use finely sliced onions, cooking or tart eating apples grated, a little vinegar (balsamic for preference) a mere sprinkle of brown sugar and a dusting of cinnamon.

          I can't stand anything as mushy as the classic long-cooked red cabbage. I just cook it like a 'drumhead' cabbage, but with vinegar in the water instead of salt. The vinegar keeps it bright red, and adds just enough sharp 'tang', but it is still slightly crisp, as cabbage ought to be.
          Flowers come in too many colours to see the world in black-and-white.

            I did mine with onions, parsnips, white wine vinegar, brown sugar, nutmeg, cloves and cinnamon.....

              Onion and cooking apple here - and I cook it in vegetable stock.

                My Gerry (OH) always makes this. It is a slow cook one but in no way does it become mushy. We omit tinned chestnuts and substitute our own frozen fresh ones. It is simply the best.
