Plenty of time before you have to worry about whether to pinch out or not.

Two types of tomato indeterminate/cordon (they just keep growing) and determinate/bush.

The side shoots from cordon toms are usually pinched out, those on bush toms are not.

I believe Sub Arctic are bush?

Sub arctics are indeed a bush tomato so you don't pinch them out. Just give them plenty of room between plants and they'll do fine.

Sub Arctic are indeed bush type, no pinching required. As far as I know Big Boy sounds like a beafsteak type which are usually cordon. They will need support and the shoots which grow in the leaf joints pinching out.
