  • Eggs florentine, with runner beans...

I *try* to eat a low-carb diet, and breakfast always poses me a problem. I suddenly thought of eggs florentine yesterday, and finished the (whisper it) shop-bought spinach I had in the freezer. Today I had the bright idea of using very finely chopped, almost shredded, runner beans, as I'm up to my knees in them, in place of the spinach. I added some sliced mushroom too, cooked slowly in butter and olive oil, and it was all lovely.

I put very finely sliced RBs in salads too for a lovely pea-like flavour.
Is there anything that isn't made better by half an hour pottering in the veg patch?

I use a mix of six scoops of compost three scoops of sand/grit and two scoops of perlite, the quantity is unimportant as long as the ratio is the same, if for seeds I use this mix, if I am potting on I add some blood, fish and bone, along with a small quantity of chicken manure pellets
