  • Pineapple toffee anyone?

    Having read Irie Jan's description of her pineapple, chilli and mint jelly reminded me I had been meaning to try and make some pineapple jam. Tesco has a special offer on pineapples at the moment so I bought a couple.
    Made a few small pots of very nice tasting jam and then decided to take a leaf out of Irie's book and cook up as much of the left over fruit as I could to make an ordinary pineapple jelly.
    Boiled it, strained and squeezed it a la Irie - so far so good.
    Back in the pan with 1 lb granulated sugar (pint of liquid) and juice of 1 lemon.
    It seemed reluctant to set so boiled it and tested it several times. Telephone rang - turned the gas right down and left it.
    I now have a very nice tasting soft pineapple toffee cooling on a buttered plate. It's very nice. Can't spread it on my bread of course but still!!

    Sounds yummy

    I made some pineapple jam last year, I just used Silver Spoon Jam Sugar and it set fine. It costs a little bit more, but I think it's worth it because you get a set without boiling the fruit to death

      Actually, it's not bad at all. I assumed because the jam set, then I wouldn't have a problem with the strained liquid - and to be fair I should have ignored the telephone call!!
      I'll know for next time though (and I might just invest in a couple of bags of preserving sugar, just in case I get the urge again!!)
