  • just made apple and elderberry jam

    and it's yum!

    Second attempt at jam for me, had the elderberries in the freezer waiting, and got the apples free off a friend.
    Tastes great, might be a bit runny even though I did the wrinkle test thing.
    I shall be eating this on my toast tomorrow!

    Well done you! There is something rather satisfying about making your own jam. I had my first go last year but have made lots more this year.

      Wonderful! I still have my elderberries in the freezer - just haven't got around to doing the gooseberry and elderberry I'm planning. Been baking cakes this week. I've started a village Cake Club - once a month we'll take turns to bake and all have tea/coffee and a slice of cake in the village hall. First meeting tomorrow so I and a friend are making the first ones. I can see home-made jam as a filling!

        oooh cake.... not made one for ages.
        Got a friend coming monday for coffee and she is partial to a slice or 3, so maybe I will have a play with the new oven on sunday!

          Great idea Janeyo, I hadn't thought of elderberry jam at all and I've loads of them in the garden.

          So I could do Apple / Elderberry and Gooseberry / Elderberry - any others?

            Jam and Chutney making is addictive, I made my first this year and now it's competely out of hand.

            I love the idea of a Cake Club, Flum, can you tell us a little more about how it works? Would love to try something similar in our village

              I've made three different sorts of chutney, blackberry & apple jelly, apple raspberry and redcurrant jelly. Won't be any elderberry though, the blackbirds have eaten them!!

                I'll be doing this today, to clear some more freezer space:

                Elderberry and Apple Jam

                2 lbs of rough chopped apples (skinned & cored)
                2 lbs elderberries
                4 lbs of sugar (I like light soft brown)

                1. Cook down the fruit, then pass through a sieve or jelly bag
                2. Add sugar, keep stirring until dissolved
                3. Turn heat up and boil for about ten mins until it thickens.
                4. Do the frozen plate set test

                Makes seven jars of jam.
