| Was looking to dry some of my herbs (woody mainly - rosemary, thyme, oregano and some sage). I found this quite helpful - I'd never considered blanching them though. Drying Fresh Herbs - How to Dry Herbs at Home I may consider tying them in bunches and then tying them to the racks in the oven on a very low heat. Putting the shelf as high as possible to give me the required height to allow the herbs to suspend fully and allow air to circulate sufficiently. We have a fan-assisted oven, so we'll have the required heat and "draft" to hopefully dry them successfully.

| That's handy - got loads of oregano to dry. And I really like the idea of making up some little bouquet garni. Only one problem - it says gather herbs on a dry sunny day? We should be so lucky! Much of my marjoram is in flower - anyone know if I can still dry it or will the flavour have turned? |
