    I finally got round to weighing my yacon tubers from the harvest last month.

    I bought a little tuber for £2.50 in Feb and grew it on in a 40L pot. And it's produced a whopping 10.25kg of tubers, plus a big crown to be divided for growing next year.

    So...yacon salad, dehydrated yacon crisps and yacon syrup...any other ideas?

    I thought it was the little tubers at the top of the root that you grow on the next year

      Yes, that's right. There are 2 different tubers - big ones you eat and the little ones at the top. Though in my case these seem to have fused into a few large blobby bits at the top. The tubers beneath are enormous.
