  • White Borlotti Beans

    Hi Guys

    Some of the Borlotti beans I picked today are white/pale green, while the others are mottled as I would expect. Does this mean that they are unripe? Can these still be eaten?

    I eat Borlotti beans like runners so I would guess that you would be fine to eat them as they are.

      Were the pods hard & crispy, or leathery and soft? I suspect they're unripe: they don't turn mottled until quite late.

      However, if your pods were genuinely ripe (dry & crispy) then they aren't Borlottis


      Either way, they're still edible ... if you think about it, the pods are edible as green beans, and the ripe seeds are edible as kidney beans ~ so the middling stage is going to be edible too

        They are still edible I picked mine and half were white/pale green but you have to start tidying up somewhen dont you
