I've just got back from holiday and returned to find my shallots with nice big flower stalks on them 
What should I do? Harvest them now and eat them quickly?

if the flower stalks are quite small you can just nip them off but if they are big or in full flower then just eat them . quite a few of mine have small flower stalks and i have just removed them
