Looks like the flower stalk - means its bolting.

Does that mean it's time to dig it up?

Don't do anything until one of the garlic growers comes along to advise you!!

I snap them off and leave them to carry on splitting into cloves.

When weeding, the best way to make sure you are removing a weed and not a valuable plant is to pull on it.
If it comes out of the ground easily, it is a valuable plant.

Don't throw them away though as the scapes are lovely in stir fries

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?

If they are hardneck garlic they are supposed to put up flowers. If it is softneck then it is bolting when it flowers. Hardneck garlic doesn't store for as long as softneck garlic

Yep,scapes also nice in a salad, cut the stem off below the bulb & cook/eat raw the soft green flesh above the bulb

I believe you can also very finely chop it & mix into butter to give a mild garlic flavoured butter

Elephant garlic produces them too. Except larger an with a milder flavour, have eaten all mine already

I always understood that once these scapes appeared (i.e. the flower head), you should cut them off so that the plant doesn't direct energy into the flower, but keeps on directing energy into the bulb. Then you wait for the leaves to yellow and die back before harvesting. That's what I've always done and seems to work for me. I only ever grow French rose garlic.

As others have said, the scapes are a lovely by-product of garlic. Chop them up and add to stirfrys, or just to a medley of other veg, sweated in a little bit of butter. They are rather reminiscent of a garlic-scented green bean! I've also seen plenty of recipes for scape pesto, although I've never tried making this.
