  • Freezing bruised or damaged French beans

    I'm sure this has been asked elsewhere, but I must be putting the wrong words in the search box. I've got loads of French beans which are slightly aphid and probably other things damaged. I know they're fine to eat now, but will they keep OK frozen? A lot of them just have that sort of papery brown skin that rubs off to reveal fresh green skin, but some, like the pod at the front have brown spots on.

    Personally, I wouldn't store anything damaged or bruised but that's just me.

      They look tough to me. I wouldn't freeze them!

        I chop those bits out.
        Lightly steam and freeze in home made tomato sauces so you can't see the smaller speckles/blotches!!
        The acid of the tomato also helps preserve them.

        I do wonder though....are they a bit stringy???

            Personally compost them,thats what i have had to do with several,so not all is lost,
            sigpicAnother nutter ,wife,mother, nan and nanan,love my growing places,seed collection and sharing,also one of these

              Thanks all. They're fine to eat. I already had some, and tthey turned out soft and tasty enough. They were fresh of the plant yesterday.

              I'd like to be able to store them, so I'll go with Nicos' suggestion of cooking them in sauces, then I'll save the sauce.
