I've grown them as sprouts, indoors, in a jar.

OP, are you aware that the bulk of the members of this forum are in/from the UK ? Our temperatures & growing season are not the same as yours in Maryland, as has been noted in previous posts using bold &/or large/capitalised text is considered shouting, which will not win you many friends, furthermore comments like ... please do not respond if you have not grown ... will only serve to upset people, we are a friendly lot & members do like to have a little social banter.

I haven't grown Adzuki beans but maybe I'd like to. Can they be grown as a mature vegetable as well as beansprouts? Do you eat the pod or just the bean seeds? Any good tips on how to cook them?

I doubt they would grow to full size here Martin (without building them a special environment

), USDA only shows them introduced into Louisianna & Missisppi .. Plants Profile for Vigna angularis (adzuki bean) ..

Thanks for the links! BB's one says you can eat the young pods or you can let them ripen fully first. They sound tasty, shame they will struggle outdoors but maybe those "Express" ones are worth a go here in the South East.

chart you posted lists where the grow wild not where they will grow if farmed.
90 day growth period should doable for most of UK

I guess I'm not going to be growing these any time soon, can't find a supplier of seeds of the "Express" variety this side of the pond

This may be considered off tangent but as already said, most people on this forum are from the UK and although there is a reasonable selection from other countries it really would help if you add an indication of roughly where you're growing on your posts so advice can be made to suit.
