    So here goes
    Roasted garlic and onion chutney.

    1K 600g skinned, thinly sliced onions
    500g roasted garlic pulp.... about 800g garlic bulbs before roasting.
    100g dark brown sugar
    150g white sugar
    350 ml of either distilled white, or red wine or white wine vinegar
    About 2 and 1/4 teaspoons salt. I add 1 and 1/2 then taste and add more if necessary.
    1/2 teaspoon ground black pepper

    sunflower oil.

    Roast your garlic, and squeeze out the garlic into the preserving pan.

    Fry half the onions in 2 tablespoons of sunflower oil and a table spoon of the sugar.
    Cook slowly until the onions are very soft and reduced. Then increase the heat and brown off the onions. Put the onions into a preserving pan.

    Repeat with the remaining onions.
    Add all the remaining ingredients except the salt and simmer until the mixture is reduced and thick and syrupy.

    Add some of the salt mix well and taste. Add more if needed.
    Pot into hot sterilised jars with vinegar proof lids.

    Can be eaten straight away but improves on keeping.

    Basic onion marmalade which I use as it is or use as a base to add other ingredients to.

    2k peeled and finely sliced onions
    100g dark brown sugar
    150g white sugar
    350 ml distilled white vinegar, or white wine vinegar
    1 and 1/2 teaspoons of salt.
    1/2 teaspoon black pepper

    Same method as above.
    For sage add 8-10 tablespoons finely chopped fresh sage

    For seeded add 3 teaspoons of black onion seeds for an added bite

    Use red onions, 2 teaspoons of black pepper and 1/2 pint of a peppery red wine.

    For real ale and onion do three times the recipe and add 2 bottles of real ale which you have simmered separately until reduced by three quarters. Then add it to all the ingredients for a final reduction.
