    I think it's gone to seed - have I left it too late?

    Fennel is notorious for bolting especially if sown to early in the year or if it gets dry. Start harvesting when the bulbs are a useable size.

      if they bolt, will they be inedible?

        no, but they are tougher.

        You can chop up anything which is tough and include it in a stock.

          would you recommend taking the flower heads off? Mine are heading for seed too but there's not enough bulb yet to warrent lifting

            As they have gone to seed they will not bulb any more, you can either pull them now or save a few for the seeds.
