Squeeze a kernel with your thumbnail & the liquid should be milky:

yes liam as bigmally says, peel back some of its leafness untill you can see some corn, when you see a good looking kernel, squeeze it, it should be milky, if not, pull the leaves back up over the kernels and wait another couple of days, mine were all up a while ago i loved waiting for them to be ready

I, on the other hand, like to be different!
I'm trying growing Popcorn this year, they say to leave the cobs on until the plant is dead as they have to dry out thoroughly.
        They are different colours too!

I harvest normal sweet corn when they look ready & I'm hungry!!

When the tassles have gone brown they should be ripe
