  • Courgettes, courgettes EVERYWHERE!!!!!

    Heeeeeeeeeeeelp!
    I have courgettes everywhere. We're sick of um, so are our neighbours, they refuse to take any more off me. Can't make anymore Courgette chutney either.
    Any other recipe idea greatly received.

    courgette cake ........


    250g butter
    250g caster sugar
    4 eggs
    350g SR flour
    Juice and zest of 1 orange
    1 tsp cinnamon
    ½ tsp mixed spice
    350g peeled and grated courgette

    125g full fat cream cheese
    50g unsalted butter
    300g icing sugar
    1 tsp orange juice



    Preheat oven to 180C/350F/gas mark 4
    23cm or 2x20cm lined cake tins


    Cream butter and sugar together
    Beat in eggs one at a time
    Sieve flour and spice.
    Fold in1/3 flour followed by ½ orange juice and zest, repeat using rest of flour and orange, saving 1 tsp of juice for icing.
    Stir in courgettes until well mixed.
    Pour into tin and bake for 1 hour or if using two tins 30-40 mins or until cake is firm to touch.
    Turn out and allow to cool.

    Beat cream cheese and butter together until creamy
    Beat in icing sugar and orange juice until creamy and smooth
    Use to cover or cover and fill the cooled cakes.

    NB. Do not use low fat cream cheese as it makes the icing too runny!

    and you can grate your courgettes and freeze in the required amounts for future use (when they are in the dim and distant past)

          Borrow a dehydrator and dehydrate them... to use as chips with dips or later on in cooking etc.

              I posted an absolutely fabulous chocolate courgette cake recipe in that section on these forums. I can thoroughly recommend it, and I'm sure it'll freeze too

              I heard you can freeze courgettes if you cube it, or grate it (or at least I assume so), and freeze it on a tray, then transfer to bags once frozen.

              I don't have THAT big of a glut this year, so I won't have to try it out. Has anyone else tried this?

                  ROFL I do apologise - I didn't read everything properly, obviously! Thank you for pointing that out

                  Someone told me, up at the allotments, that there's no way to freeze courgettes cause they turn into a mush.. which I thought was odd. Is there anything that can't be frozen in one way or the other?

                    Another nice savoury recipe is a Gino recipe. Open, drain and rinse a tin of beans. Using a potato pealer, make thin strips of courgette and blanche for a minute in boiling water. Mix with beans, add lemon rind, grated, oil, salt and pepper and lemon juice. Lovely salad.

                      i had about 20 courgettes a couple of weeks ago so grated them in food processor, sweated some onion & garlic off in a big pan added some red wine & a couple of tins of chopped toms, some chilli threw in the grated courgettes, seasoned, brought to boil then left it under a very low light for about 5 hours (cause i forgot about it) result was a lovely thick sauce which has frozen really well and we;ve used it as a base for pasta sauces on spread on pizza bases. Will be making another batch with the rest of my glut

                          Don't blanch them else they will mush , and if you chuck 'em still frozen into hot fat to roast or on a hot griddle they are fine . My frozen grated ones go into cake so I defrost them first cos mush is ok in that .

                            Thanks Binley - I'm gonna try freezing some of mine as both me and my daughter are getting a little bit tired of having courgettes every day lol

                            I might try out Hans mum's recipe too - that sounds interesting

                              Grate them, add breadcrumbs, an egg, parsley, lemon juice, garlic and chilli. Mix together, then dollop spoon-size amounts into a frying pan with a slug of olive oil. Mmmm, lovely chilli courgette fritters
