freezing leeks

  • freezing leeks

    some of my leeks are begining to produce a flower spike, and as there are to many to eat i would like to know if i can freeze them.
    also i have been told any leeks with a flower spike cant be eaten unless you slice down the middle and cut out the centre core.is this correct ?

    Bolted leeks are pretty tough: not nice to eat. Compost them, or let them flower for the bees

      Put them through the blender and use the resulting frozen gunge as a basis for soups.

        Let them flower and try saving the seeds as Zaz suggested.
