    Every year we grow runner beans, what ever we don't eat I leave on the vine to grow and save as seed for the following year, but this year I have a bit of a glut.
    My question is this, once the beans have grown to maturity, can you eat the beans, we've only ever eaten them as young beans sliced.

    I am growing White Emergo simply for it's dried beans (like a butter bean).

    As with kidney beans, boil thoroughly, don't eat the seeds raw. They contain that toxic lectin:

    "seeds from most varieties of kidney (Phaseolus vulgaris), (and) runner (Phaseolus coccineus)beans showed high reactivity with all cell types and were ...highly toxic". Brit.Journal of Nutrition

      oh upps we have some in the freezer that we blanched that have got full seeds in?
      how long do we need to boil um for we have about 60pounds in the freezer
      Some things in their natural state have the most VIVID colors

        I had some that had got too large last year and shelled them and bunged them in with all mix of drying beans. I've eaten them all and am still alive to tell the tale.
        I just soaked them overnight and boiled in the usual way.

          you wouldn't be eating the whole pod with seeds inside? Bit tough non?

            we was still eating the pods as well thought they where a bit cheweee oopppss

              Tried to make runner bean pod wine once, it was disgusting
              I you'st to have a handle on the world .. but it BROKE!!
