  • Walnuts?

    We have again this morning been out on 'walnut patrol' and picked up another box full. Having already made apple & walnut chutney....which turned out excellent, was wondering whether there was anything else we could do with them, apart from storing them. How long do they keep?

    I'm a fan of walnut pesto, also walnuts stored in honey are delish. I posted a recipe on the green walnuts thread for an Italian walnut sauce which you can also make with 'normal' ones.

    I make walnut bread all the time too.

      There are loads of date and walnut cake recipes 'out there' in interweb land. I also found a walnut biscuit recipe a couple of years ago. It was more like a small bun, but lovely.
      They are smashing with a warm goats' cheese salad.
      When they are shelled they keep sweet and tasty in bags in the freezer for ages. I've used them after 2 years!

        If you have ever made 'almond paste' (also known as 'easy marzipan') you could make a walnut version (the recipe I use for hazelnut 'marzipan' is even easier, and would adapt, 'liquid glucose' from the chemist, warm slighly to make it runnier, and blend in icing sugar and ground nuts in equal quantities until it is getting pretty stiff and hard to mix..... It does seem to keep fairly well, or would freeze) A different topping for the Christmas cake!
        Flowers come in too many colours to see the world in black-and-white.
