  • Vegetable Crumble

    This vegetable crumble incorporates Cheese, Nuts and Seeds in the topping, covering a mixture of vegetables which may be varied with the seasons (oh, whoopie!.....)

    Crumble Topping:
    100g Butter
    175g Wholemeal Flour
    100g Cheddar Cheese
    50g Chopped Mixed Nuts
    30ml Sesame Seeds

    Vegetable Base:
    675g Mixed Root Veg: Parsnip, Swede, Turnip, Potato, Carrot, etc. etc.
    1 large onion
    50g Bugger
    25g wholemeal flour
    225g Tomatoes
    300ml vegetable stock
    142ml Milk
    3 tblsp.Chopped Parsley
    S & P to taste

    1. Rub the butter into the flour until the mixture resembles fine crumbs. Add the cheese, nuts and sesame seeds.

    Chop the vegetables, then melt the butter in a large pan and saute the onion until transparent. Add the prepared veg and cook over gentle heat, stirring occasionally, for 10 mins.

    2. Stir in the flour, then add the remaining ingredients. Bring to the boil, reduce heat, cover and simmer for about 15 mins, until the veg are just tender.

    3. Transfer to an ovenproof dish.

    4. Press the crumble topping over the veg and bake in the oven at Gas 5 for about half hour, until Gordon Brown, texture like sun......

      LJ, I am SO sorry! Talk about red wine all over the screen, keyboard and cat now.... That has to be the worst typo I've done since in the advertising business when I was knee-high to a grasshopper and quoted something from the Radio 4 programme 'TOADY.'... which, funnily enough, never did go down well with the client for some reason....!

                    I'm sure I will enjoy this forum, I spent ages yesterday reading the threads. Already have a recipe printed off to try out today.
