  • Traditional Raised Pork Pies

I was talking with a friend of mine last week about how we both fancied making some Raised Pork Pies. I'm picking up some rare breed organic pork from a local farm this week and thought this would be the perfect opportunity to try it out.

Anyone had any success with making them that might be able to suggest a good recipe?

The river Trent is lovely, I know because I have walked on it for 18 years.

Never tried it myself, but I know the traditional way uses hot water pastry - you need to work fairly quickly with it I believe. Try googling for a recipe.
