  • Tomato soup squares

    TOMATO SOUP SQUARES
    MAKES 1 X 23CM X 30CM TRAYBAKE

    125g unsalted butter
    225g plain flour
    2 tsp baking powder
    ¾ tsp bicarbonate of soda
    ½ tsp ground cinnamon
    ½ tsp ground ginger
    A pinch of ground cloves
    225g golden caster sugar
    1 x 300g tin Heinz tomato soup
    2 medium eggs
    50 g raisins

    TOPPING
    125g softened unsalted butter
    10g icing sugar
    300g full fat cream cheese
    ½ tsp vanilla extract

    1 melt the butter and allow to cool. Use a little to grease 23 x 30 traybake tin.
    2 preheat oven to 190c gas 5 , Sift the flour , baking powder, bicarb of soda and spices into a bowl then mix in the sugar. Whisk the soup eggs and melted butter in another large bowl, then combine the two mixtures and whisk until smooth then stir in the raisins. Pour into the tin.
    3 Bake for 30-35 mins until risen and firm and a skewer inserted at the centerr comes out clean. Run a knife around the cake and leave to coolin the tin.
    4 Mix butter and icing sugar and cream together, blend in the cream cheese a spoonful at a time until smooth then add the vanilla extract stirring until mixed.
    5 Spread topping over cake and chill in the fridge for about an hour until set.

    When do you add the soup..........................sorry a bit dim today and cant see where you add it.

    Sounds lovely though, i want to try it.

      Made it this morning, not bad, a little OTT with the topping

        You see, i knew i was having a dim moment (or several dim hours)
