  • Tacos made from polenta

    I had a pack of polenta.
    Thought I would make some tacos.
    Added water but couldn't get it to form a dough. It kept falling appart. Tried to roll it out to no avail.
    In the end I just spooned it into a pan and fried it as lumps.
    Most disappointing.

    Any ideas, is polenta OK?

      ^Well, that's interesting. I was given some nixtamalized corn (blue and yellow) once, but both packets were full of grubs. So, I have a tortilla press still waiting for a purpose. I will give this a try. Thanks for asking the question, Jimmy, and thanks for providing the solution, Bren.

        If you have trouble rolling out a mix like that try rolling it sandwiched between two sheets of cling film or greaseproof paper or silicon sheets.

        My husband is gluten free - gluten free pastry doesn't hold together and that works a treat for me.
