  • Sugarless, fatless fruit cake.

    For those of you wanting to cut down after Christmas, but still fancying a piece of fruit cake, this is a delicious alternative. The texture is firmer than a rich fruit cake, and for those who don't want to watch the calories, it is lovely sliced and spread with butter or whatever. As a weightwatcher, I have added in the points, you can then weigh the finished cake, and calculate your portion accordingly.

    12 oz raisins, sultanas or a mix of each (soaked overnight in 0.5 pints tea to plump the fruit and bring out the natural sugars to sweeten the cake)

    4oz glace cherries (if you miss these out it still works fine)

    10oz plain flour sifted into a bowl with
    1 tablespoon baking powder and
    1 teasp mixed spice (allspice or cinnamon work well too)

    2 beaten eggs.

    Add the fruit and tea mixture, eggs and 1 teasp almond essence (if you like it), to the flour mixture. Beat together until you have a stiff but sticky batter. Place into a 2lb loaf tin and bake at 140C until a skewer comes out clean. (around 40-50 minutes)

    Total points without cherries = 32, with cherries = 36.

    BarleySugar what a great recipe, I must try it and take it to work - everyone has started WW this year!
    Trouble is, another grape posted HFW's wholewheat honey cake as well! Dilemmas dilemmas eh?
    Please keep posting ww recipes BarleySugar - I keep losing my copy of the mag and not bothering to read up as well as I should!
    Whooops - now what are the dogs getting up to?
