Has anyone got any recipe ideas for brussel sprout tops?

  • #2
Use them like any green veg; kale, cabbage etc. I tend to lightly steam them but am sure that you can do more elaborate things with them if you want.

Some of us live in the past, always talking about back then. Some of us live in the future, always planning what we are going to do. And, then there are those, who neither look behind or ahead, but just enjoy the moment of right now.

Which one are you and is it how you want to be?

Oh, you could use them in the famous Portuguese soup Caldo Verde. The traditional cabbage used is the primitive loose-leaf couve tronchuda (as seen in the Victorian Kitchen Garden) but sprout tops would be the next best thing

I'm sure I posted a link on this topic somewhere else, but can't find that, so here is the recipe from the BBC website. Sprout tops work just as well.

          Sprouts Soup

          # 500g sprouts
          # Small onion
          # 1 tbsp vegetable oil
          # Grated nutmeg
          # 2 tbsp medium sherry (optional)
          # 1.25 pints chicken stock

Fry the onion in oil until soft and lightly coloured. Stir in sherry and add stock. Add sprouts, a pinch of nutmeg and seasoning. Simmer for 30 mins. Pass soup through a sieve, puree in a blender, season to taste and serve hot.

Its on the blown brussel sprouts thread MB.

            Soup looks good SS.

How about shredding and stir frying. If you get really carried away you could use them to make "seaweed"

If at first you don't succeed, open a bottle of wine.

Oh yes Earthbabe, No.1 son likes to take an onion and some bacon, chop and fry gently, then put shredded greens into the pan and stir-fry/steam til it's tender.

                Supersprout soup?

It might need a bit of salt and pepper Snadger.

l enjoy the sprout tops as much as the brussels and l always just cook them as l would cook cabbage or greens. Superb flavour that l would be reluctant to alter tho some of these ideas look good
