  • Southern Fried Chicken

    OK, so not strictly GYO, but a fab recipe nonetheless!

    Ingredients:

    8 chicken thighs
    600ml milk
    250g plain flour
    1tsp cayenne pepper
    1tsp paprika
    1/2 tsp chilli powder
    1/2 tsp each of dried chervil, parsley, chives and tarragon
    1/2 tsp celery salt
    1/2 tsp garlic powder or granules
    1 level tsp sale
    Black pepper to taste
    Oil for cooking

    Method:
    1. Whisk the chilli, cayenne pepper and paprika into the milk. Place the chicken portions into the milk and soak for four to five hours.
    2. Sieve flour and salt into a bowl and stir in the herbs, celery salt and garlic.
    3. Prepare a basking tray with sufficient oil to cost the whole tray thinly. Heat the oven to 200 degrees C.
    4. Lift each piece of chicken out of the milk mixture and shake off the excess liquid, then dip into the seasoned flour and coat well. Place each peice of the chicken on the baking tray and put in the oven.
    5. Cook for 25-30 minutes until crispy and golden.

    I always wondered how to make this. I tend to find our local KFC too greasy for my liking. Will give it a go. Thanks!

      Won't touch KFC, not ethically reared chicken, I can't get the same deep biting thick crunch though even by doing it this way, tried it a little while back
