  • Seedless raspberry jam

    Tried a new recipe for seedless raspberry this morning. Instead of the usual spoonful on a cold saucer to test for set, the recipe said to use a sugar thermometer, fast boil the jam, and stop cooking at 105 degrees C.

    Numpty that I am, I have never noticed the sugar thermometer has a jam setting mark on it, I've always used the saucer test.

    Anyway, out with the thermometer and removed from heat at exactly 105C.

    Perfect set!

    Of course, no jammy saucer to lick, but heyho, nothing's perfect.

    Sounds very nice, I only like jams that dont have seeds or lumps of fruit in

      I'm just doing my 2nd lot of raspberry jam MH - great minds
      Last night's effort was slightly runnyand not quite sweet enough for me. Hoping this batch will be better and less gory.
      I've tried the Jam Thermometer but I have difficulty holding it at the right level over bubbling jam - and even more problem reading when it has reached the correcct temp as my glasses steam up
      How do you do it please?

        I made a jar of seedless raspberry a week or so ago. Not all been eaten yet though!

          VC I shine a torch on the thermometer otherwise I can't see past the steam.

            At this rate I need to grow another pair of hands - stirring, holding thermometer, and now torch. Maybe a head torch would help
            Can't believe that people find making jam pleasurable. It does me 'ed in.

              Can you tie your thermometer to the pan handle that would free up one hand.

                Mine has a clip on the back that hangs onto the side of the pan. That said I hardly ever use it as the big style rolling ball indicates the setting temp anyway and means less washing up.

                      Mine's like this - and you have to hold it or tie it to the side as Bren suggests

                      That £1.99 one looks interesting - maybe I could modify a wooden spoon to fit it in

                        I got lucky with me jam pan, they were selling them off for a tenner in Sainsbibs last year, reduced from £50, because it's big, AND I have a clip on thermometer it's a big easier for.

                          Wilko's provided me with a clip on jam thermometer at a reasonable price , wouldn't be without it

                            Mines the one like the eBay link they have a clip on the back that hooks on the pan but I've managed to scrub away most of the markings so next time I want with embossed measurements.

                              Here's mine.



                              Nowadays I only make small batches of jam at a time, no more than a couple of pounds. Making that amount is pure pleasure. I use one large pan, no more than a third full, and just let the thermometer rest on the bottom and lean against the side, and leave it in the pan.

                              If the jam bubbles up over it I pull it out a bit and give it a swipe with damp kitchen roll to see the line. Once the jam starts boiling I don't stir it.

                              I always add a little fingernail size knob of (good) butter which does stop the jam bubbling up too high, makes less scum, and also seems to keep all the scum together. In fact, when I turned off the heat today, the scum very neatly clustered around the thermometer and I lifted it clean out with the thermometer.
