  • Roasted Tomatoes

    My 100s and 1000s tomato plants are producing like crazy! They taste wonderful, but we are getting a bit tired of tomatoes at every meal and I wanted to preserve some for the winter. Don't know how this will work, but I have roasted a quiche pan full of sliced toms together with garlic, basil, oregano, black pepper and olive oil. Then I packed them into plastic boxes when cool and froze them.
    Has anyone else tried this? Do they survive the freezer with taste intact? If so, we shall have a little bit of heaven in the depths of winter.

    Yes they do!! I usually roast mine as you describe and then blitz them into sauce and freeze in small plastic tubs as there's only one of me.

      Me too! They're delicious during the winter, sometimes I add peppers to roast with the tomatoes. Add stock and you've got a lovely fresh tasting soup. You don't have to slice them up either, just half/quarter or leave small ones whole. Gorgeous stuff
      Life is too short for drama & petty things!
      So laugh insanely, love truly and forgive quickly!

        Thanks folks! Good to know that it works - and that I don't have to halve the toms. The 100s and 1000s are weeny anyway.
