  • red currants

I have nearly 4lb of red currants left in my freezer, and not quite sure what more to do with them. At the price they are at the moment in the shops I want to make sure I appreciate them! Other than wine and jelly, the only the use I have had for them is putting them in stews.I find them too tart to eat raw so any ideas ??

They go well cooked with venison, turkey and chicken as a sauce. Traditionally they were used with venison and boar. Got any boars around you?

You just cook them in a pan and reduce them and trickle them over your preferred meat. And then there is the option of making a cheese cake or a red currant fool.

Fools And Boars are applenty round here Andrew You could make an anaemic dick (if you pardon the phrase) red currant jam instead of black
