    A few people have asked what to do with the few bits and pieces of veg that you get at the beginning of the harvest, this is an idea that I often use when I have a few bits and pieces ready but not much of any one thing. (its more a general idea than a specific recipe)

    Vegetable and Pasta Stirfry (for two people)
    150g pasta shapes (penne, bows etc)
    A few rashers bacon (you can use other meat or chicken obviously)
    1 - 2onions (fairly essential)
    1 Carrot
    Whatever bits you have in the garden or fridge, I generally use things like peppers, courgettes, peas, brocolli, pak choi, Beans etc (the more people I am cooking for the more bits I put in.)
    1 tablespoon or so oil
    2-3 tablespoons of soy or other sauce (I often use sweet chilli or plum sauce)

    Method
    Cook the pasta, drain and rinse
    Cut the vegetables into suitable size pieces, the longer they take to cook the smaller the pieces, cut the bacon into strips.
    Heat the oil in a wok and cook the bacon till just done then add the vegetables depending on cooking times. (carrot and brocolli first, peas last etc)
    When the vegetables are done, add the pasta and sauce, keep stirring to heat through.

    Another use for your veg bits is a tortilla or frittata type thing...I made a good one the other day.

    Browned some sausages and boiled some potatoes, chopped all these up into bite sized pieces when cooked, browned some onions with finely chopped stalks of swiss chard, added the chard leaves (like spinach) to wilt, add the potato and sausage and pour over some beaten eggs, cook until the bottom is starting to set then grate a bit of cheese over and put frying pan under grill(use foil to protect the handle from melting!!!) to set the top.

    Cut into wedges and serve with a nice big salad from your garden...yum!!!

    In my cooking, quantities are never exact and any veg you harvest can be substituted, you can also replace sausage for some nice chunks of home cooked ham or bacon or pepperoni

      We have this Voodo Veg - very tasty, my Mum in law calls it Spanish Omlette and does a pretty good one too ...... for a mum in law
