  • Parsnip & Apple Soup

    This is a fab recipe I found in a magazine....just tried it for dinner...yumm

    1 med onion finely chopped
    2 cloves (or more to taste) garlic crushed
    325g parsnips peeled and chopped into chunks
    225g tartly favoured apples (I used bramleys cos I love em
    25g butter or similar
    small chunk of finely chopped ginger
    1 tsp ground cumin
    freshly ground pepper
    550ml veg stock
    100 ml cream, creme freche or milk
    squeeze lemon juice

    put chopped onion and crushed garlic into big pan and add butter sweat for 5 mins, dont allow to burn
    add parsnip, apple, ginger cumin, pepper and stock to pan. Bring to boil then reduce heat to simmering. Cover and cook until parsnips are just tender. Let soup cool for few mins then liquidise or blend until smooth, add cream and lemon jiune, reheat for a few mins then serve with good bread.


    Enjoy!

    This is my family's favourite soup, though we call it Christmas soup because we generally only have it as a starter on Christmas Day.
    Into each life some rain must fall........but this is getting ridiculous.

      I used to make 'Christmas soup' (a very different one) a few days AFTER Christmas..... (go on, guess<g>)
      Flowers come in too many colours to see the world in black-and-white.

        I thought I would post the recipe as it was scrummy, and easy to make.

        I thought someone else might fancy it who has never heard or made it before.

            Oooh I spotted that recipe too and thought it looked good. As it has now been tried and tested I'm definitely going to give it a go!

              Sounds fab - I love ginger and cumin. I've got a pile of apples to use up, so will try this tomorrow. Perfect for a rainy day lunch!

                Being a skinflint I used the last of this soup up by adding a little more water and some potatoes. I have to say the flavours worked really well after resting together for a while and made a substantial stew like meal.

                  I have just made this and it is GORGEOUS!
                  I would say don't be tempted to miss out the lemon juice as it really lifts the flavour. Thanks Northepaul, I am going to do this on Friday for the MiL et al
