  • Mincemeat loaf

    This is a Mary Berry recipe given to me by a neighbour. It works wonderfully, tastes great even straight from the freezer and is a doddle to make.

    350g mincemeat (shirley's, your own or shop bought)
    2 eggs
    150g caster sugar
    150 soft margarine
    225g self raising flour (Gluten free with 2tsps baking powder works just as well)
    225g currants (I usually use raisins or sultanas)
    a few flaked almonds (optional)

    Heat oven to 160C. Grease and line base of 2 x 1lb loaf tins with greaseproof paper.
    Crack eggs into a large roomy bowl and add all the other ingredients except almonds. Mix until well blended, divide between the two tins, level tops.
    sprinkle with almonds if using. Bake for approx 1 1/4 hrs until risen and pale golden brown and shrinking away form sides of tin.
    A fine skewer inserted should come out clean.
    Turn out of tins and cool on a wire rack.
    Peel off paper and store in an airtight tin.
    Delish with tea/coffee etc.
    Can be frozen.

      Thanks it sounds good. I don't make a christmas cake as no one else likes it, so I think this could be a good alternative
