  • Made the marmalade!

    I bought 1kg of marmalade oranges, and made my marmalade yesterday evening and this morning. Oranges cooked in the pressure cooker for 40 mins
    pips (and some pith) removed, sugar added last night, but then it was too late for cooking, so did the rest this morning. I found the sugar thermometer, and that makes it SO much easier (yes, they can break, but if they don't break, saves testing far too early....) ended up with 7 full jars, and enough 'leftover' for a few slices of toast over the next couple of days.
    Flowers come in too many colours to see the world in black-and-white.

    made mine last week!

    Probably going to make soem more next weekend to get me through the year. Thought I'd give the whiskey marmalade a go!!

        me too!

        I just finished my first ever attempt at marmalade! Seville oranges (wow they really ARE bitter as I found out when I tried the pre-sugar liquid, makes your lips curl!), crushed coriander seeds in the muslin with the pips as per the recipe I was using.
        It tastes good, although I did have to fish out some of the rind that had caught on the bottom of the pan. My recipe said to get it up to 105C but I had to quit at 103C as it had started to stick to the bottom of the pan. Seems to be OK though.

          Made mine this weekend but couldn't get any Seville oranges so went with normal ones plus some lemon rind. Will it be OK?

            Yes, but it won't be as bitter as with Sevilles. My in-laws prefer it with sweet oranges. Sometimes I do half oranges and half lemons. (We call it St Clement's!)

              I used to make a 3 fruit marmalade with an orange, a grapefruit and a lemon.
              Very nice it was.

                So did I, until I learned about the wax they put on the skins. Maybe one of these days we will find 'local grown' grapefruit in the market when we are in Spain, and I will be able to make grapefruit marmalade again (lemon is no problem, you CAN buy unwaxed lemons)......

                  Thanks Flummery, very reassuring. I'll try it tonight and see how strongly the lemons affect the flavour and maybe rename it.

                  Funny thing is ... I don't even like marmalade but I kept hearing the characters on The Archers talking about it and got subliminally prompted into having a go.

                    Lol, similar thing here, I can't eat citrus fruits but I caught the preserving bug at Christmas and kept reading all this stuff about the short Seville season... now I'm on my second batch of marmalade with a second recipe!

                      I,ve got my Marmalade on the go this morning, had a recipe for sevilles but could not get hold of them will I need to use less sugar?

                        I would use the same amount of sugar, but add the juice of a lemon or 2.

                            Made my first ever marmalade this afternoon. It's set and everything! Most constructive thing I'd done all week - my time is so wasted going to work If only they'd pay me to stay at home doing constructive things...
