  • Hot/spicy sandwich spread?

    I've pickled some red and green jalapeno's with shallots and carrots. They are quite colourful (and extremely tasty!) on a layer of Philadephia on bread.
    I got to thinking, it looks a bit like a very couse sandwich spread....you know that crappy vinegary stuff you buy in jars which looks like vomit?

    If I chopped up the next lot I make a bit finer and mixed it with mayonaise or salad cream, would the mayonaise preserve it the same as a vinegar does?

    If not, how would I go about making a spicy sandwich dressing?

    mayonaise = eggs

    i would say NO!
    once open mayo does not last that long.

    however, if you just pickle the other stuff, and add it to the mayo then cover it in the fridge, i should thing 3/4 days would be safe?

      So what's that pukey sandwich spread you can buy got in it to preserve it then?

        its base is more like salad cream, which of course has vinegar in it, also it has preservatives in it,and goes through the 'canning process' even so, open the jar and it will only last a few days before it goes off.

        mayo being made of eggs and oil, will not preserve.

          oops! Sandwich spread has been in the cupboard for months!

            read the label, lol, bet it says 'keep refrigerated once opened and use within ....', if it doesn't then imagine how packed with yucky preservatives it must be

              I have seen a recipe for a spread where you mix sweet chilli sauce with mayo, if you were to make chilli jam you could then mix as much as you want with the mayo

                I love sun dried tomatoes so I bought one of those designer jars of mayo with SDT.........yuk, it is flaming gross! ..............Like the souind of the jally jam tho!

                Think I'll just chop up the next batch of Jalapeno pickles a bit smaller and have a bit of an experiment...........peanut butter with pickled Jally's might be ok!

                    Not tried it yet but Kerno??(sc)posted up a rather nice sounding recipe for chilli jam recently.Sounds pretty straightforward to make too!
