Herby tomat and potato soup

  • Herby tomat and potato soup

    2 large onions peeled and chopped.
    1 garlic clove crushed.
    2 celery sticks chopped.
    2 oz butter.
    1 lb. potatoes peeled and diced.
    2 pints chicken stock.
    2 tsps mixed herbs.
    salt&pepper.
    half pound tomatoes skinned seeded and diced.

    Melt the butter in a pan, add the onions and garlic and fry gently for 5 mins without browning.
    Add the celery and potatoes and cook for a further 2 or 3 mins.
    Pour in the stock and bring to the boil.
    Add the herbs, salt and pepper.
    Lower the heat, cover and simmer for 20 mins.
    Remove the soup from the heat, stir in the diced tomatoes and simmer for a further 2 mins.
    Cool, label and freeze.
    Alice, i usually put mine through a blender to make a smooth soup but its nice either way.
    I also make it in bulk when i have a glut of tomatoes.
    You can add chilli's to it to give it a good "bite"

          Thanks Bramble - sounds lovely. One for the scrapbook.

          I make alot of soup - I find it quite theraputic for some reason.
