  • Gooseberry chutney

    An adaptation of one which came with some bits, using what I had to hand.

    1.5 lbs goosberries (topped and tailed)
    1/4 lb raisins
    1/4 lb sugar
    4fl oz vinegar
    pinch each of ground mace, sea salt, whole cloves
    tsp crushed black peppercorns
    heaped tbsp brown mustard seeds soaked in boiling water for 10-15 mins
    2 inch piece finely sliced fresh ginger

    Chuck all in a pot including the water from the mustard seeds, bring to boil, simmer till soft, bottle.

    It really was that easy, it tastes delicious without any standing/maturing and has gone a pretty pink colour.
