        Hi

        I thought it was because gammon was always thicker than ham.

        Talking off which I had some lovely Wiltshire ham at the pub today.

          Is the temperature really the difference? I'm sure I have eaten warm ham in a pub. I thought it was something to do with what part of the pig and how it was prepared.

                  I have just cooked an unsmoked gammon in cherry coke - finished in oven with honey, red wine vinegar, red currant jelly and clove glaze. it is delicious hot or cold. As recommended by the lovely Nigella.

                    Gammon is a "prime cut" from the leg of the piggie. Hence more expensive than the generic "ham" which can be from anywhere and can be quite fatty. Both are cured pork.
