  • Emergency Fudge question

    I'm making fudge, it's been on the rolling boil for ages but doesn't seem to be thickening any. I've been doing the soft ball test on a saucer but not getting anywhere.

    What do I do?

    hi
    you need to tak it off the heat and beat it until it is thick and glossy. you need to beat for ages. it should be fine then

      Ok. so it's soft ball test after you've beaten then?

        you make some popcorn or a steamed sponge, or get ice cream, and use it as a sauce..... can you tell i've often given up on runny fudge

                    If the pot is enormous, it will take ages to boil away enough water to reach the 'done' point. It really is that simple.

                      I did 3 times the quantity, so it's a pretty big pot. I think we're getting there though, almost soft ball stage now. Woo hoo!

                            Just back, took the dogs out for a walk so I didn't have to watch it seting/not setting.

                            Just stuck my finger in it, looking good!
