  • Do egg whites freeze?

    I've got 8 egg whites left from a creme brulee recipe... could make meringue, but currently on diet, so don't want any tempting stuff aound yet!

    Can I freeze them to be used (e.g. for meringue) at a later date? Would I put it in one of my freezer bags for liquid?

    They freeze very well and are ideal for merangues etc. Just pop them in a freezer bag and mark on it how many are in it.

      I freeze them in ice cube trays, one white in each tray and then pop them out into a freezer bag. That way its easy to take out the amount you want.

        otherwise just make the meringue and freeze that - i've done that a few times and then you can get a very quick pudding sorted at the last minute for a dinner party or similar by taking it out a few hours earlier and covering in thick cream and and load of frozen billberies from last summer.

          Ooh! I've never thought to make meringue and freeze it - leftover whites get frozen in ice-cube trays like Black Kitty's.

            Hi OWG - yes they do freeze (I'm thinking of Nigella in one of her TV programmes). She puts them in plastic bags in twos then when she wants to make a meringue she gets them out, defrosts them (of course) and whisks them up. DDL
