  • Delicata squash dip or what

    Grew some Delicata squash, did well with the weather this year.
    Cooked a Lasagna last night so I popped the squash in on separate tray underneath.
    I cut it in half first down the length ways and scooped out the seeds.
    In each half I put a teaspoon of cumin seeds a teaspoon of soft brown sugar, salt, pepper and some peanut oil.
    Cooked for 40 mins with lassie.
    Looks yummy, I have a curry to finish tonight, I thought if I scooped out the flesh and mashed it, it would go nicely on a poppadom.

    What do you think?

    When i grew them,they were also ok with a filling,rice ext,cheese,but does need some flavour to go with it,makes a starter or a lighter main meal depending on what you add,as you say,scrape it out the skin as you eat.
    just to add,they climb very well and are prolific.

      I've got a pressure cooker recipe for squash hummus. Essentially, mash up squash with some harissa, chickpeas, garlic and lemon juice to turn into hummus of texture you like. No real need for tahini as the squash is so soft when fully cooked in a pressure cooker, but always good if you have it. I made it for ten once, thinking there would be loads of leftovers, but four of us finished it. Went down a total treat. It was very similar this:

        I tried it last night.
        Not much good on poppadoms.
        But great just spooned as a relish.

        Onion chutney is best for poppadoms.
        Did you know it's dead simple to make like the curry houses serve.

        Chop up an onion very fine.
        Squirt of tomato paste, say 2 inch long.
        Massage into onion
        Leave for a few hours.
        You could add your own embellishments , cucumber , chilies etc.

        The "Butternut & harissa hummus" looks interesting, might try that some time.
