  • Death by Courgette - recipes/cooking ideas needed!

    Daughter who planted the courgettes has gone off camping with the family - I am in charge of the courgettes. Have picked loads and loads, fried them, grilled them, roasted with bacon, cooked with pasta, added them to veggie burger mixes and meat loaf, forced them on to friends and neighbours - and stil have loads in teh fridge and on her plants. One or two have escaped my searches and become Marrows.

    Any good ideas on how I can feed them to my husband under any different disguise?

    Courgette bread - there's a recipe on here if you do a search, and courgette cake.

    I live in hope - shame they don't travel, you could have sent me some! My cautious sowing of only plant ('as you are bound to get loads!') hasn't given me one yet!

      Hazel, I have three plants and we have harvested 6 courgettes. They took a fortnight off with the bad weather but I noticed 3 'fruit'? swelling up today!

        There's hope for me yet, then!

        Sowed a second one a couple of weeks ago - I'll pot it up in the week as it's now got a couple of 'proper' leaves.

        Looking at them longingly in the supermarket but won't buy them on principal!

          Thanks Hazel -courgette bread - that's a new one! My daughter did make a courgette chocolate cake before she left - very good it was too.

          You'd be more than welcome to help yourself if you lived nearby - tell you what - next time I go up to B'ham, I'll chuck a few out of the train window as I pass! [Sorry - having a silly 5 mins ]

            Lightly fry a couple of big courgettes, put half in an oven proof dish. Fry a big onion or a slack handful of shallots. Sprinkle half the shallots on top of the courgettes in the dish. Take a couple of rounds of the French goats cheese and chop roughly into cubes. Put these on top. Add the rest of the shallots/onions and then top with the second lot of courgettes. Cover with a lid or foil. Bake for about 15 nmins in a hot oven.
            This makes an accompaniment for several people or a main course for a couple of veggies.
            Whoever plants a garden believes in the future.

              Anyone got courgette recipes that don't involve cheese or tomatoes?

              I am of course, hoping that mine come into better production with the sunshine!

                  Grate it, squeeze excess moisture out of the grated courgette in a clean teatowel (yeah right!) no, it's important! and then mix the grated C with some mayo, S&P, or whatever you like, grated carrot? Lemon Zest... Name your poison. Delicious.
                  Absolutely no tomatoes, and no cheese.
                  How did I do?!

                    I'm doing courgette soup tonight...no recipe, just the usual base of fried onions, pinch of this and that. There was a recipe in BBC Good Food Vegetarian Summer I think...

                    has anyone got a copy of What Will I Do With All These Courgettes (or similar title)...its always advertised in back of gardening mags

                      Sounds good thanks Wellie. I have an allergy to tomatoes and am not fond of strong cheese though I do enjoy dutch gouda and monterey jack. Most of the lovely sounding recipes on the vine seem to include tomatoes! I grow them for Madmax though I can't eat them at all. Will deffo give your idea a try once I have some bigger courgettes (cue time for courgettes to turn yellow and keel over!)

                        I've just sent for it from Amazon - about £6 I think. Strikes me I might need it in future!

                          Excellent book October, I've got a copy and am still working my way thru it, our favouite way is fried in butter with Onions & mushrooms & a large Sirloin steak

                            Boil or steam some potatoes until not quite cooked. Cool and cut into thin slices.
                            Saute onions, garlic and sliced courgette in some butter.
                            Make a white sauce.
                            In an ovenproof dish, layer the sliced potato and courgette mixture adding S &P as you go.
                            Pour the white sauce over.
                            I would sprinkle with cheese
                            but you may want to sprinkle with breadcrumbs or just dust with paprika.
                            Bake in the oven at 180 for 20 - 30 mins until bubbling and a nice colour on the top.
                            Serve on the table from the dish.
                            Great with sausages, ham, left over cold roast or chicken.

                              The main trick with courgettes is to fry not steam/boil as they're pretty watery to start with. The soup was okay, quite fresh tasting. Slice and fry courgettes and onions till soft not brown, add stock and simmer for about ten mins. Then stir in some soft cheese with garlic and herbs (that Philly sort) and some sour/double cream. Add lashings of ground black pepper and serve with crusty bread.
