    I like a Vindaloo.
    Just found this recipe and might try it with some of my Apache Chills !

      There a Phal recipe , the video is not as mad but the recipe does use 30 chilles !

        Jimmy, just wanted to say thanks for posting this link. Had a look round this lady's recipes and tried her butter chicken one. It was delicious...clean plates all round! Yum!

          Tried the Vindaloo over the weekend. It was hot but not ridiculously hot. It only has 4 chillis and a teaspoon of chilli powder so unlikely to be raging. Anyone who likes a hot curry would like it. The phal on the other hand might be a bit hotter with 30 chillis. Don't think I would want to waste 30 chillis on one dish.
          I did a mint raita and some onion chutney plus mango chutney, lime pickle and poppadoms, most enjoyable.
          Did you know the standard curry house onion chutney is just a diced onion with 2 inch tomato paste mixed in and left for a few hours. You can add a real tomato or chillis or cucubmer, whatever takes your fancy.

              We went to a restaurant in Chinatown in London, my OH choose a dish he hadn't heard of. The lady serving said she would have it made Western style as she didn't think he could take it so instead of a couple of hundred chillies she would only put in half. We though she was joking, no she wasn't, the dish came and all you could see was red chillies!! Hot, hot hot! Will be careful next time we eat in Chinatown.,

                I've never had a hot Chinese dish, only Indian/Pakistani with the odd ferocious West Indian dish.

                    When i read the recipe I first thought the 30 chillies was a typo I'm sure I'd only feel the heat and not taste the flavours by using that many.

                        might I venture hunan cuisine, this part of china loves lots of red chilli, not like sechuan cuisine hunan is called dry heat. probably the most famous dish is hunan beef, fried beef slices covered in chilli garlic paste with a handful of whole chillies for good measure

                          It wasn't that Alex, when I say there were hundreds of chillies in this dish I mean it! Loads of little red chillies. It's going to bug me now trying to think what the dish was.
