    Mr Z, whilst we were in a swanky arts place prior to a gig last week [one of my all time favourite 'artists' of all time] decided to hit me with the suggestion of us doing carb free weeks - starting with this one.

    Now, I'm veggie and have been for mumble mumble years - that's over 2 decades and nearing 3 [how did that happen, exactly?] - and I know that we rely on pasta and rice and potatoes big style. So we thought we would go into a 5 day 'no carb' frenzy - and then just use what we - [well, I] learned about it to go low carb when we are back on it. Well, once I've devoured the 3 remaining cinnamon bagels in the freezer that I froze on Sunday night. Oh the pain...

    Anyway - it's been ok so far.

    Monday
    B - melon
    L - veggie soup - home made
    D - curried veg, with a good helping of salad and some home made cheesy coleslaw, some cauli and brocolli
    P - melon and strawbs

    Tuesday
    B - melon and strawbs
    L - veggie soup [very late as my students didn't get picked up til 3 so I was chomping at the bit by then]
    D - stir fry with same side helpings as monday
    P - melon, strawbs, pineapple and yogurt

    Wednesday
    B - Fruit with yogurt
    L - the rest of the salad and coleslaw mixed up with more cheese, peanuts and avocado.
    D - Veggie chilli, with side of veg and fresh coleslaw, and a cheesy sauce made with cheese and cream
    P - fruit salad with yogurt

    At this juncture, I am quite enjoying it - I thought I would be hankering for something starchy but it's not too bad.

    Tomorrow we are planning the same B, L and P - with main meal of omlette and halloumi with salad.

    Friday is cauli, brocolli & carrot mash with veggie sausages and a tomato sauce which I am going to colour with gravy browning to make it feel more gravyish.

    B = breakfast
    L = lunch
    D = dinner/tea whatever you call it
    P = pudding

    I've bought veggie hot dogs so that next week I can have omlette for breakfast.

    Any veggies have any further low carb ideas for bulking up meals, I'd be eternally grateful.

    *Any meat eaters that say 'I don't know why veggies have to do this, or that - or why don't you just eat meat - or anything resembling those sorts of remarks, please take your comments elsewhere. I don't tell you what you can or can't eat so please don't tell me what I should or should not do. Thank you.

    I'm virtually carb free - not veggie but nonetheless

    Low carb (beanless) humous AND check out the crackers yum yum yum

        Also, if he wishes to cut it to the quick for a short sharp stint then I would cut out fruit for the week - then re-introduce the low carb fruits which are berries

          I'm sure I have a low GI vegetarian cookbook somewhere that may have some ideas for you, I'll have a look in a bit and see if there may be any inspiration for you.

          Are you eating plenty of protein, like lentils, beans and pulses in your chilli/curry etc? I love bean stew (though I do tend to have it with cous cous or crusty bread - but you could have quinoa instead which is high in protein even though its a grain).

          Lentil dahl? (But then again the tendency is to want some naan or rice with it).

          What about nutty things? Do you like things like nut loaf or nut burgers? Or just adding cashews and seeds to stir fries and things like that.

          What about tofu, are you a fan? I know a lot of people are 'afraid' (for want of a better word) of tofu but I love it, and we use plain tofu, marinated tofu, smoked tofu, basil tofu etc, and I find it quite versatile, I really like it, but I know lots of people dont.

          Actually thinking of quinoa, you can make a kind of porridge with that, not that I ever have, but I did think about it the other day if that counts.

          Edited to add: bean salad, I love this in the summer, a good homemade one rather than any of those yuk ones in the supermarket. Also hummous and falafels.

              Also also - be prepared for wheat withdrawal - seriously .... I had five days of it with two seeing me flu-like.

              I would never go back to wheat - ever - at all - never! There is so much good stuff out there one can it

                Oh yeah - load and loads of protein - quorn, beans etc - you'd never get me eating quinoa though - like tiny little eyes glaring at me. Eugh.

                Tofu I am fine with - not sure about himself. Pesto tofu might be ok as a small side dish, if cooked first.

                  Zaz, I often substitute lightly cooked shredded white cabbage for rice or pasta. Its especially good with veggie chilli. Cauliflower cheese is another bulky item that only needs some tomatoes or summat on the side.

                    This is going to be our new lifestyle now that BH is diabetic. They aren't vegan as the diabetics need animal fats and proteins.

                    And then there this;




                    Low Carb Chocolate Cake

                    Pre Heat oven to 180C

                    23cm lined and buttered cake tin ( I just used a tin liner)

                    150g dark chocolate (80% or above)
                    150g butter
                    6 eggs
                    20gm of splenda ( I used Aldi Sweetener 99p jar)
                    tsp vanilla essence
                    100g ground almonds
                    1tsp cinnamon and a pinch of ground cloves
                    2tsp instant espresso


                    Melt butter and chocolate together. Beat eggs vanilla and sugar together until frothy.
                    Gently fold in dry ingredients - and then fold in chocolate/butter mixture. Stir gently until the mixture thickens - it's the oddest thing, how it thickens...

                    Pour into the tin, bake for 35-40 mins. Remove from the oven and cover with a tea towel until cool. It will fall a couple of inches and be very moist inside.

                    You can eat this slathered in fresh cream and it will still be low carb!

                      Also -rethink 'your' standard ideas of what is breakfast, tomorrow for example I will be having a bubble and squeak made up from my left-over celeriac mash and lamb shank (I know, it's meat) and will top it with a fried egg.

                      I use LARD to fry - LARD I tell you and haven't put on an ounce for eight weeks. For you I guess lard is a no go - so I would fry the egg (gentle heat) in butter.

                          He does if he goes out but I don't think he's had a meaty meal at home since we moved in together. That's 7 years. Wowsers.

                          I do ask him if he misses it but i think I feed him well enough that even when we go for a roasty dinner he chooses the veg option, so I think that's my answer.

                            I just recently got into porridge and although I never thought I'd say it - it's the main thing I am missing! That and my cinnamon bagels.
