Baileys Rocky Road Brownie

  • Baileys Rocky Road Brownie

    200g dark chocloate (chopped)
    100g condensed milk
    50ml Baileys Irish Cream
    25g butter (melted)
    75g dried cranberries
    75g white chocolate (chopped)
    75g digestive biscuits (crushed)
    200g mini white marshmallows
    100g white chocolate (melted for drizzling)

    Place the dark chocolate, condensed milk, Baileys and butter into a large bowl and melt over a pan of simmering water

    Beat until smooth then cool slightly, then stir in the cranberries, white chocolate, digestive biscuits and marshmallows

    Line a swiss roll tin with greaseproof paper/baking parchment and press the mixture into the tin

    Cover and leave to set

    Drizzle with the melted white chocoltae once set then cut into thick fingers and serve.

    OWG Note:
    We missed out the cranberries as I hate them! It was still lovely and very moorish.

    You could make these for when the family come round, or make some up as presents...just wrap in cellophane/baking paper and present!

    Having just read about the choc puds and now this - I'll have to be digging for days to work this lot off! OWG do you take in lodgers?

      If you want to come and dig the paddock... I'll make you as many chocolate related puddings/desserts as you want!!
