  • Aubergine Bake

    As fed to Zazen999

    Take two good sized aubergines and slice them lengthways, sprinkle on a tad of salt to draw out some moisture and lay on a kitchen towel for a few minutes.

    Wash the salt off and pat dry before frying both sides in a pan or on a griddle with just a splash of oil. Transfer to a serving dish and arrange in layers till all used up. Using the same pan, gently fry off some chopped onion and garlic till soft and layer on top of the aubergine.

    Add a generous sprinkling of good grated cheddar.

    Cover with either home made passata or tinned chopped tomato and finally top with shavings of parmesan. Season to taste and add some basil to the tomato.

    Chuck it in a hot oven to warm through and melt the cheese.

    Serve with a simple salad and a wedge of toasted baguette.

    Please sir, what's 'titchen towel'?

    Is your recipe for passata on the vine? I am hoping to have enough toms this year to make my own but when I tried last year it was rubbish

          I like easy recipes maytreefrannie, makes one more inclined to rustle up a good feast after a hard day on the hamster wheel of life.

          Being a proper carnivore, I must say that I really did enjoy it as a dish in its own right.

          It ticks all the right boxes for me,
