    I saute the shredded leeks in butter til very soft, add small cubes of potato and just a little water lid on to steam. When spuds are soft I top up with the milk to make it as thin/thick as you like, and reheat it all. You can always whizz it a bit if you like a few less lumps in it. S&P to taste..

    If you've been asked to make 2 veggie soups, why would you want to use Chicken Stock?

    Not really, if I was being picky I would probably use something sharp like Granny Smith but it usually ends being whatever I have at the time

    As Thelma said it was never specified veggie soup, what I did say was that some one told me chicken stock was better for leek and potato soup
    it may be a struggle to reach the top, but once your over the hill your problems start.
